Can I use the paymentLink to fire up an embedded checkout?
unfortunately not
It feels like I need a way to make sure a thing is unique on Stripe API rather than on my side but I might be wrong.

yes, the payment link leads to a Stripe hosted Checkout. Like what my colleague mentioned before, if the products are unique, it's best to keep track of them on your side
Payment Links are really meant for adhoc payments, or payments whereby you don't anticipate having to manage stock/inventory. If you have specific inventory stock, I would recommend that you use Checkout Sessions so that you can manage/check product inventory
There is no stock. Just offers to particular users.
So even though as you say links are for "ad hoc payments" maybe it is the way for me to keep track.
I could create a link on stripeAPI when the offer is created on my side to make sure it is only payable once.
But, I cant make up my mind right now on waht way to take

No, there's no option to set an expiration date for a payment link
