I see in the api docs that you can delete a customer, but it then says Unlike other objects, deleted customers can still be retrieved through the API in order to be able to track their history
We're trying to honor customer data deletion requests so ideally when they request their data to be deleted it is truly deleted
As far as I know, the customer object is the only exception to this. I don't know the exact reason behind why we keep the deleted customer object. Could be for disputes/fraud prevention. I don't for certain though.
I'd recommend talking to our support team or emailing privacy@stripe.com if you have any specific concerns
