What do you mean by number of payments? Are you referring to the number of cycles of the subscription to be made?

If you have an existing subscription, you'd then create the subscription schedule from existing subscription first: https://docs.stripe.com/billing/subscriptions/subscription-schedules/use-cases#existing-subscription

Then update the phases of subscription schedule to the iterations that you're looking for
