So with the new API version the default is to have capture me async. See: https://docs.stripe.com/upgrades#2024-04-10
That means that the Charge/Balance Transaction/Application Fee will not necessarily be available immediately
This improves latency
If you want it available immediately, you need to specify capture_method: automatic
