But, before I deleted your message I see the issue. You're listing Customers (customer.list) and looking there, but those details (custom fields from Checkout) exist only on the Checkout Session object

If you wish for those to be propagated to customers (via metadata for example) then you will need to do that in an webhook handler for checkout.session.completed events
