also, can i confirm the behaviour of the au_becs_debit
when my clients finish the setup intent and input their details, payments are automatically authorised without any more input from the client?

Yes once setupIntent is confirmed successfully, you can create off-session charges without asking your customer to provide more info. Check https://docs.stripe.com/payments/au-becs-debit/set-up-payment?platform=web#web-future-payments
