this is my flow
user lands on my checkout page - I render Payment Element with default amount - user fills out all needed info - then they can select fast shipping, which costs more - in this case amount to charge gets changed

but when I confirm the payment I see that amount is old and doesn't include shipping

It's when you update the underlying PaymentIntent on the backend, and want to update the Payment Element accordingly.
