You can manually create customer Tax IDs with the API, yes
Thank you so much!! And for this situation do you think is it a good idea, or do you recommend me to create a custom field to request (mandatory) the tax id, and then creating via API?
Also, once a customer has a tax id, it will appear in the invoice right?

The customer would write their VAT number in a custom field in Stripe Checkout
