You could just make an Update Payment Method API call that changes the PM's billing_details: https://docs.stripe.com/api/payment_methods/update#update_payment_method-billing_details

So just to confirm, there's not a way to handle this strictly through the stripe elements js client?

Not without mounting another Payment Element and re-accepting the full Payment Method details unfortunately
