I want to create a webhook once an order is made that will go to an endpoint depending on the product.
Some webhook will go to different website for exemple

that's not really possible no. You define endpoints by the type of event they receive(like payment_intent.succeeded )not anything else. Your code that handles the webhook can check what was bought and route internally in your system accordingly.
