Okay then there are 2 places they will need to go to turn this off. Unfortunately this isn't something that can be done via the API.
First you turn off Link for Payment Methods:
https://dashboard.stripe.com/test/settings/payment_methods
Then make sure it's off for Stripe hosted surfaces:
https://dashboard.stripe.com/settings/link

I've turned them off, but my colleague still reports it shows up. Is there some kind of cache for these settings?

That is what I'm saying. Because they are Standard Accounts, their own Payment Settings are what gets applied

That's unfortunate. If it's "on" by default, there should be a way to disable it via API
We add new Stripe Accounts programmatically, and disabling this particular setting manually is tedious
Also for me it says "Inherit default (On)" in connected account. Is there a way to change the default?

Unfortunately, it doesn't work. Not it shows "Inherit default (Off)", but "Save with Link" is still displayed

Okay yeah you are setting these accounts up where you should have complete control over the payment methods shown.
Unfortunately I'm going to have to ask you to write in to Support for further help with this. https://support.stripe.com/contact
I recommend providing as many details as possible including the fact that you talked to me on Discord and I recommended you write in. Mention how you are onboarding accounts and include the account ID you shared with me. The more detail you provide, the faster you will get routed to the right people.
