Okay, I've registered staging.airtable.com on our production stripe profile with that workspace id. I still don't see google or apple pay show up in the payment element however.

Ok so this has to do with the publishable key you're using
You're using a really old one that starts with pk_ instead of pk_test (or pk_live) for live mode. THose old ones don't support google pay
You just need to roll your publishable key
