When using Stripe Checkout you must specify an existing Price ID, Product ID or product_data: https://docs.stripe.com/api/checkout/sessions/create#create_checkout_session-line_items-price_data-product_data
If your unit_amount changes dynamically, it's best to use price_data with an existing Product ID: https://docs.stripe.com/api/checkout/sessions/create#create_checkout_session-line_items-price_data
