hi! AFAIK you would collect shipping outside of the ECE and use https://docs.stripe.com/payments/collect-addresses?payment-ui=elements#create-an-address-element , or your own inputs.

But doesn't that deefeat the point of the express checkout element?

Because it's meant to be a 1 click buy option
