As far as I know, Stripe really just passes the same statement descriptor that's on your account. It is possible that the bank is doing some magic on their end to retrieve merchant specific information.
I can spot check a payment for you where you're seeing the phone number in the descriptor. You can also check with our support team who are more familiar and experts in statement descriptors via https://support.stripe.com/?contact=true

Yeah, you can use the 4242 test card in a test mode and check the associated payment intent's statement_descriptor property
