You need to change your request (req_5jvlEe41yiAq4c) to set the application fee when you create the Payment Intent https://docs.stripe.com/api/payment_intents/create#create_payment_intent-application_fee_amount

We currently are adding the application fee, but we are trying to move away from that and use Stripe's new Platform Pricing which I thought created the application fee based on the pricing schema that we set on the Stripe dashboard.
The application fee is created (per the stripe pricing schema that we set) when using a card stored in our database, but when the card is entered, the application fee is not created

Ah, this is a beta feature - I'd recommend you write into support (https://support.stripe.com/contact) and ask them for clarification on why it's not behaving as expected. For the most part we can't help with gated/beta feature in discord
