Hello, some extra information here.

For example, if a user pays with a visa we might charge 10%, amex : 20%, but if they pay via us_bank_account we might charge 5%,.

This is pretty simple to do when we are doing something like

stripe.PaymentIntent.create(
    amount=...,
    application_fee=calculate_fee_based_on_payment_method(...),
    ...,
)

But when it comes to a

stripe.checkout.Session.create(
   ...
)

We don't actually know what the payment_method the customer is using will be, so we can't populate the application_fee_amount ahead of time.

My question is: Is this possible, and if so, what is the recommended way to achieve this via Checkout Sessions?

Hello, unfortunately it isn't possible to update the application fee after a payment has completed. Are you using direct charges (created on the connected account) or destination charges (created on your platform account)? If you are using destination charges, you can switch to using separate charges and transfers and then simply change the amount that you send to the connected account.
