Yeah the customer need to have an email so we can send the Invoice to them and collect payment

Do I have some payment options available without an email set ? Can I create a checkout session or create a subscription, for example ? 🙂

If you create an Invoice with collection_method = charge_automatically (and of course your customer need to have a payment method on file, which is collected beforehand) then yes you can let Stripe charge them without providing their email
