And no you don't have information about the Link customer's account holder name. You could only have their email via this property in the Payment Method object https://docs.stripe.com/api/payment_methods/object#payment_method_object-link

Can we integrate with Plaid?

Using Plaid is a deperated flow, and it's a completely different thing to Link

We need to know the bank account holder's name to do the name match, if the name mismatch we can't let the clients use ACH service, we need to comply with the compliance requirement to only allow the client to deposit fiat through his own bank account. Otherwise different name account deposit may cause malicious reversal/return to us and cause us losses.
Other similar ACH service providers like Circle and Checkout all provide bank account holder's name value, it's really confusing that stripe is not willing to do so because the data is "sensitive", we can let clients authorize us to acquire the name value, the legal side should be no problem.
Receiving fiat money from unknown third party without proper KYC is not allowed in Pionex US, hiding such important information go against the anti-money laundering principle
