You can listen to payment_intent.suceeded webhook event, and send your own custom email

how can I access this data apart from looking directly at the stripe dashboard manually

You can also listen to that event, but it notifies you when a checkout session completes, and the payment may still be pending (for payment methods can't confirm payment status immediately, i.e., ACH direct debit)
