Okay, taking a step back. the "description" value in Stripe is separate from a "statement descriptor" (which is what a customer sees in their bank statement)

sure , but going back to question is there a way to customize statement descriptor which will show for transfer in custom connect bank account

It'll be critical to use the right terms here. A Transfer exists on the platform account. a Transfer creates a Payment on the Custom connected account. Funds from these payments are paid out to the Custom connected account's bank account
