Where are you creating the key exactly?
The Stripe secret key doesn't expire usually.

Dashboard->Developers->Api Keys

There I see the secret key, but to get it I need to roll it and can only choose

Oh, that's the expiry date for the old key. During this period both keys are valid and this gives you time to change the keys in your application.
