1/ For holding the funds you can read https://docs.stripe.com/connect/account-balances#holding-funds
2/ They "sit" in your platform's balance mostly on Stripe or in the connected account's balance depending on your integration
3/ It's a bit murky overall. Like technically you can do whatever you want with that balance as the platform, but if you need "buckets" to split them you can have the funds sit in each individual connected Express accounts at least
