I have tried sending all individual prices together, but it looks like this route they have to cancel their entire plan to drop one.

Yep that is a limitation of the customer portal. Currently it only supports changing prices on single product subscriptions at the moment. So like if you have bronze, silver, and gold tier the portal can help you switch between them, but it can't add an additional item or change one of two items. So you will need your own UI for that unfortunately

One last thing, you mentioned "switching between" plans, but I don't think I have seen that in the docs yet. What would I search for to find that?

Unfortunately not seeing further docs on this. If you have a question on how these settings work I am happy to look in to it
