where can I find the pricing for all country and payment method?
I checked here https://stripe.com/it-ch/pricing for example but only gives me prices for switzerland, and for example I cannot see Paypal anywhere

it's the pricing for merchant accounts based in Switzerland(presumably where you're located and where your Stripe account is), customer location doesn't really matter.

In my test environment (my merchant account is based in estonia)
I tested a payment (pi_3OptNUGU3kHC8CPi0ZU3SSVr) which seem to have a higher fee (more than double) than what it should have been (1.5% + €0.25)

Why is that?

ah wait, the test card used is based in US, so probably I got the international fee of (3.25% + €0.25)
