Have you talked to WooCommerce yet? If you're using a third-party plugin then they would need to change their code to stop passing in statement_descriptor

but I don't understand where to change that. If it's a Stripe update, you should tell me where I should change it

That's why I mentioned you should talk to WooCommerce - if you're using them then they integrated with Stripe and would have more details on where the code you need to change is
