if I cancel the subscription on the admin dashboard I get the customer.subscription.updated

So if you set subscription to be cancelled at the end of the billing period you'll get customer.subscription.updated immediately. You'll then get customer.subscription.deleted at the end of the billing period. If you cancel subscription immediately you'll always get customer.subscription.deleted immediately.
