@distant pumice no, Checkout doesn't support that feature. We don't really have the concept of a "default payment method for future payments" unless you use our Billing product

OK so then another question: is there a way to setup a subscription with usage-based billing that immediately charges the customer whenever usage is reported?

But no we don't have something like what you describe for usage-based billing. It's kind of the opposite of what usage-based billing is usually used for

We're trying to allow for "pay as you go" customers

so there's a subscription plan, and they get a certain amount of usage per month. Then there's "pay as you go" and we charge them immediately on usage

not really sorry, there are many ways to do a lot of this, just unclear right now what you want

You can charge someone for $10, save their card, and later charge them again for $17 on Monday and $23 on Friday based on their usage, that's totally allowed and supported
