So how can we verify bank accounts of customers in Switzerland and Denmark

You would need to use a third-party outside of Stripe if you want to perform verification of these accounts. Otherwise, you could payout a very small amount to those bank accounts when you first link them to ensure that doesn't fail.

Yes if the Connected Account has payouts enabled and there are avaialble funds in the account to payout
