I don't want card or any other payment method to be on show, I just want bank account to be the option

I see, you can create a payment method configuration, https://docs.stripe.com/api/payment_method_configurations/create and specify the payment methods you want to show your customers. Then, you use that payment method configuration when creating the Payment Intent for instance, https://docs.stripe.com/api/payment_intents/create#create_payment_intent-payment_method_configuration.
