Hello! If you're registered to only collect tax in the UK in the Dashboard that's the only place it should happen, I think.
Are you setting the appropriate tax code on the Product? https://docs.stripe.com/api/products/object#product_object-tax_code

I've set the tax code on the product to default which show as none
is there a way to override the product and price tax via checkout session?

You can disable automatic tax on the Checkout Session, yeah: https://docs.stripe.com/api/checkout/sessions/create#create_checkout_session-automatic_tax-enabled
