Hi 👋 if they're seeing Apple Pay in your Checkout Session, then it sounds like Safari is being used and it's already set up for Apple Pay. To see Google Pay you will likely need to test by using Chrome and having Google Pay set up.

So it looks like this is part of an ongoing Checkout experiment that's turning off Google Pay in the UI for a subset of sessions

If you write into support (https://support.stripe.com/contact) they should be able to force you out of the experiment so you get the correct behavior
