Hello! it really depends on what kind of APIs you're working with - generally you'd go through all the stripe-specific objects you've created for them and delete the ones you can (like a customer object).
But there are some things (like Subscriptions, Invoices) that can't be fully deleted

We don't provide anyway to delete Subscriptions (just cancel them) and Invoices can only be deleted if they're a draft (https://docs.stripe.com/api/invoices/delete)

Yup, it should cancel all subscriptions and remove all their payment information (see https://docs.stripe.com/api/customers/delete)
