We do have https://github.com/stripe/stripe-node?tab=readme-ov-file#using-expand-with-typescript in our readme
yeah, was trying to avoid that but it lead me to thinking through a solution, I ultimately need to return a new map of the products and explicitly set default_price as a coerced Stripe.Price type
