Hello. The only thing that dictates whether live or test mode is used is the API keys that are used to create the Checkout Session. If you are using the Prestashop plugin and need help with that specifically then you need to reach out to our Support team via https://support.stripe.com/contact/login as we only focus on direct use of the API here and don't know anything about these plugins. There is a portion of our Support team that does specialize in these plugins however.

this is our module in Prestashop.
It happened twice now that the mode switches back to Test mode in our Stripe account.. Currently it's on Live mode, but on checkout page Test mode is displayed

Like I said, that is dictated by the API key. I don't know anything further about how Prestashop works. Maybe double check that you have your live key input in that Secret key field that is redacted?

there are not many settings for the hosted checkout to set it to Live mode: click the Mode button and input live Publishable/Secret key. That's what we did

You also can't tell why the mode jumps back to Test mode in our Stirpe account after an hour or so?

The setting in your Stripe Account Dashboard has no affect on whether live or test sessions are created.
