canceled_at is the property that indicates when the Subscription was set to be canceled. Are you updating the Subscription daily in terms of the cancellation? That is the only time that would change really. If you have an example Subscription that I can look at that would help too.

Can you access to an specific subscription_id of our company? For example this one: 'sub_1OZcDGLmYWU7Ill1o6fYmhNP' and the product that I was talking about is 'prod_PD5f0XSpQ3xN7n'

Okay os the reason is that you are updating metadata here on the Subscription repetitively.

This is actually known bad behavior on our part -- you aren't actually updating the cancellation timing, but it is a bug that hasn't been addressed yet.
