Okay so let's take them one at a time because it's tough to answer without a lot more context on each one.

Each Invoice line items will be associated with a Price price_123 which points to a give Product prod_123 and the tax code is configured on that Product.
So if you have an Invoice for one cookie, one book and one soda, each line item will be linked to the right Price/Product combo that represents each item

How do you assign revenue at the product level in the multi-product invoice?
How do you define recognition periods by product in an invoice (i.e. product A is recognized over 12 months, Product B is recognized over 6 months, Product C is recognized over 3 months) ?
