If you need custom emails, you should make them yourself and trigger them based off of webhook events

Does Stripe have webhook events based on due date? Ex: 7 days past due, 15, etc, that a custom email can be triggered from?

No. We have invoice.updated which should fire on status changes though

But you could store due date and then send out emails accordingly

however you want
