One way I can think of is to use custom field to collect the tax ID: https://docs.stripe.com/tax/checkout/tax-ids

If you use custom fields, there will also be some countries that do not have tax_type and cannot be saved in customer information.

What are you trying to do with the Tax ID here? To display the tax ID on the invoice, for your own internal reference or use automatic tax with Stripe Tax?

I'm afraid that the Tax ID on an invoice is only supported in the regions above. If you need other countries, I'd recommend writing to [e-mail] as suggested in https://docs.stripe.com/billing/customer/tax-ids
