You can retrieve and update the email property on the Customer object using the API.

Is there some other email you are referring to?

I am referring to this list of "Billing emails"

Unfortunately those are not attributes on a Customer object in the API. This is a dashboard only feature. However, you may be able to find out more about API options if you reach out to Support https://support.stripe.com/contact.
