Hi 👋
We kind of do this. You need to have a Stripe Account on that API version and then you can switch between all the API versions that you have Accounts for.
For instance. my default account has an API version of 2020-08-27 but a more recent account has a version of 2023-10-16.
Because of this I can switch between then using a menu in the bottom left of the API docs page.
