If these checkout sessions are created by the plugin, you won't be able to make the necessary change. Using Bank Transfers requires some extra parameters like the customer and customer balance details to use for payment

It is a Stripe "plugin" and we have enabled the "Bank Transfers" option:

Yep, unfortunately I'm not familiar with how those plugins work, but it sounds like it might not be setting up the necessary details for what you're trying to do
