It’s the part where you onboard and enter the company name, ein, etc and it ask for a bank so I thought well should I go with a national bank or a smaller regional bank

Ah, that is not an integration related question. You should reach out to https://support.stripe.com/contact if you have specific question related to the payouts bank.
