I think you can use https://stripe.com/docs/js/elements_object/create_payment_element#payment_element_create-options-paymentMethodOrder to make ApplePay first so that it is the one selected by default

Pairing with my team it seems we don't support this and we still selects card by default and there's no way to avoid it sorry. This would be a feature request

it seems to work fine for GooglePay but not ApplePay so I think it's a bug. I'd recommend reporting it to our support team for further help: https://support.stripe.com/contact
