Then you need to create a new Price object for that Product and start using the new Price. You can mark the old one as not active

Yeah, the idea is that we don't want you to have payments that don't connect to a Price object if they were created with one. But you need to be able to update the Price for a product. So you can create as many Prices as you want. Prices marked active=False means you won't be able to create a new payment with them

But if you have subscriptions on the old price they will continue to work until you manually change them
