You are required to have a Customer ID to create a Subscription in a custom flow -- we won't create that Customer for you.

And no, you can't remove the left side of embedded Checkout

For a custom flow the Customer object doens't have to have any data though

You can just create an empty Customer object prior to creating your Subscription if you want
