Hey huge apologies for the delay here, I am not finding this field anywhere in our .NET SDK either. I will raise this, if you want to test right now you can set this as an undocumented param
options.AddExtraParam("collection_options[fields]", "eventually_due");

So I'd say keep an eye on the SDK for a new release but in the meantime that will set this param properly.
