Hello! Not sure I understand... are you trying to generate an Invoice for a Checkout payment, or are you trying to generate an email of some kind?

Well I want a confirmation email to be sent to the customer with a summary like invoice. It would also be great if the stripe owner got the email to that way they are aware of the sale since they need to ship it out
I already have webhooks storing the order data so if the answer is no I will have to create my own email i guess
So to answer the question I guess both.

It sounds like sending your own custom email would best suit your needs, yep.
Checkout does have an invoice_creation option for one-time payments, but it sounds like you want something a little more robust than that: https://stripe.com/docs/api/checkout/sessions/create#create_checkout_session-invoice_creation
