To test Apple Pay you put a live card in your wallet and use your test keys, then we will automatically swap out your live card for a test card when you run the test transaction.

so there is no way for me to mock this behaviour using a stripe test card ?

No, only way to test Apple Pay is with a live card in your wallet.
