I don't understand what information your business needs to collect to satisfy its own operational needs, nor if you work in an industry/space that requires additional information be collected. If this is from more of a legal perspective, I would recommend speaking with your legal advisor.

Payouts or Payments? Sorry, I'm not sure I'm grasping what you were trying to ask. You mentioned Customers initially, so I'm having a bit of trouble mapping that to your clarification about Payouts, as the two are pretty distinct.

Do I need to collect the billing address of my customers for them to be able to pay me through you guys or is the email and card details sufficient?
As collecting the billing address and such slows down the checkout flow of our customers and results in fewer conversions

Depends on the type of payment method being used, but I believe most don't require an address. Are you hitting payments in your testing that are failing due to missing an address?

No, the test debit card payment goes through even though we do not require any billing address info(no ZIP, no Address, no Country)
